Tramonto Catering offers a fresh take on Californian Wood-Fired cuisine, featuring crispy pizzas, baked pastas, roasted heirloom vegetables and entree selections carved to order

Every occasion is unique, and Tramonto Catering works with clients to create a memorable, one-of-a-kind experience to reflect each event's own needs

Tramonto Catering sources seasonal, fresh and local ingredients for all of our menu selections.  Craving something but don't see it listed? No problem! Tramonto Catering works directly with clients to assess their needs and tailor menu selections that work for them



Sample Menu

  Appetizers*:

· Arancini-crispy nettle and rice croquettes, bottarga

· Suppli-crispy tomato and mozzarella croquettes

· Mozz Tots: Crispy mozzarella bites, fresh tomato sauce

· Polpettine-meatballs or plant-based impossi-balls

· Selection of Mozzarellas-Hand pulled mozzarella, stracciatella and burrata served with pickled seasonal vegetables and wood-fired bread 


Salads*:

· Little gem lettuces, radishes, avocado, citrus, ricotta salata, champagne vinaigrette

· Cucumbers, fennel, chili-anchovy vinaigrette

· Classic Caesar

· Arugula, garden herbs, shaved artichokes, roasted garlic green goddess 

· Beets, charred spring onions, goat cheese, dill


Pizzas*:

· Four Cheese

· Margherita

· Smoked mozzarella, red onion, chili, oregano, honey

· Shaved spring onions, grana padano

· Prosciutto, ricotta, arugula, smoked olive oil

· Zucchini, parimigiano, pine nuts, basil

· Pepperoni, Calabrian chilies

· Wild mushroom, prosciutto cotto, rosemary

· Pancetta, pecorino, black pepper


Entrees:

· Whole wood-fired chicken, salsa verde

· Roasted Pork Loin, spring vegetables, walnuts

· NY Strip Steak, coal-roasted onions, chili honey

· Locally line caught tuna, pickled peppers, olives

Vegetable Accompaniments:

· Whole roasted cauliflower, raisins, pine nuts

· Baby heirloom carrots, harissa, honey

· Charred summer squash, pecorino, mint

2024/25 Holiday Menu

  Appetizers*:

· Tuna tataki, cucumber, preserved black bean

· Beet dusted goat cheese croquettes

· Endive, whipped ricotta, sundried tomato, bottarga

· Deviled eggs, American sturgeon caviar, crème fraiche

· Crispy chicken oysters, persimmon, chive crema*  

· Bacon-Wrapped Dates, Black pepper, chives

· Bay Scallop Crudo, shaved baby fennel, grappa gelee  

· Sliders:

o Turkey and Cranberry Slider, Rosemary Aioli, Brussels Slaw

o Prime Rib and horseradish slider, white cheddar, black pepper aioli

o Ham and honey mustard slider, rosemary aioli, alpine swiss cheese

o Butternut squash and maple slider, crispy shallots, roasted garlic aioli


First Course*:

· Endive and chicories, roasted grapes, walnut vinaigrette 

· Little gem lettuce , soppressata, pickled peppers, fresh mozzarella, caper-sun dried tomato vinaigrette

· Warm Mushroom Salad,  frisee, smoked ricotta, egg yolk, chives

· Butternut squash soup, pomegranate, pistachio 

· Cioppino--Locally caught seafood and tomato-based stew

· Wild mushroom bisque, crème fraiche, arugula oil

· Beef carpaccio, celery root, arugula, truffle

· Lobster, golden beets, house-made burrata (+5)

· Halibut crudo, grapefruit, avocado, pine

· Portobello “crudo”, black garlic, radish, mustard greens

  

Pastas:

· Pappardelle al’ragu bolognese

· Agnolotti dal plin, braised kale, crispy chickpeas

· Strozzapretti, lobster, cured tomatoes, chilies


Entrees*:

· Prime Rib, chestnut glace stuffing, Yorkshire pudding, red wine sauce

· Mary’s Poulet vin jaune, morels, melted leeks

· Citrus brined-Whole Roasted Turkey or Honey-roasted Ham, chestnut stuffing, mashed potatoes

· Roasted stuffed lobster, fregola, cured tomatoes, preserved lemon

· Cod, applewood smoked bacon , fennel, chickpeas

· Pork crown roast, garnet yams, maple stuffing

· Beef Tenderloin and lobster Surf and Turf, baby turnips, swiss chard, horseradish

· Charred sweet potato, cashew yogurt, pomegranate, pistachio, cilantro, mint
